With Valentine’s Day just right around the corner, allow me to introduce you to Flutes at the Fort where I recently spent a hearty weekend afternoon with my wife for a perfect yet reasonably-priced brunch. Do note that the following is not the Valentine’s Day menu which they are currently offering but the ambience and vine-yard inspired setting makes this place worth the visit regardless of the occassion.

Just the other day I was doing a search for reviews on Flutes at the Fort prior to my visit but to my surprise I couldn’t find many reviews of this vineyard-inspired restaurant.
Located on a slope at the end of Fort Canning Park, it’s quite easy to miss this restaurant if you don’t know the directions. To put it simply, the restaurant is right behind the Central Fire Station at Hill Street.
If you are driving, you would be pleased to know that there is complimentary valet parking services right before driving through the car park entrance. Moreover, parking is free so more savings in that aspect.
What you see here is a 1908 colonial black and white bungalow and according to Flutes at the Fort website, this is the one and only of such bungalows located within the Central Business District and it was used to serve as the old Fire Chiefs’ home. How interesting…
We came here primarily for the Saturday brunch which serves every Saturday from 11am – 230pm. In fact Flutes at the Fort also serves other types of set meals such as the Executive Lunch, Chef’s Table Set Menus (vegetarian option available) and not to mention, a very extensive selection of wines and champagnes.
With more than 8 awards under its belt, we were really excited about the food here. Since we were here for the brunch, its worth noting that you can choose from either a 2-course (for S$33++) or 3-course (for S$38++). We went for the latter.
You might think this looks sort of “heavy” for a starter but really, its not. Thinly sliced fresh salmon topped with rich and buttery hollandaise sauce and a poached eggs, all accompanied with raw rocket and asparagus. Great combination, I say.
I adore mushrooms. And there’s tons of it in this starter dish (which is a very good thing actually). I love the consistency here, as each bite of the mushroom is juicy and firm in texture, not to mention that the mushrooms all come with a hint of the fragrant garlic taste. The sourdough and goat’s cheese compliments the mushroooms further.
From the Main Course section
Honestly, the Eggs Benedict here would probably put those from other restaurant to shame. Trust me when I say the eggs used here are huge. As in, really huge. The main difference here would be the additional spinach sandwiched between the poached eggs and ham. Some might not like the taste of spinach but for those who can accept it, prepare for a combination that is rather unique.
Depending on my preference for the day I would prefer my steak to be either medium rare or well-done. This time round I went for the latter and all in all I am very pleased with the skills of the chefs. The steak is well-seared and the steak tender enough to meet my expectations. Not to mention the red wine sauce goes really well overall.
Prior to your indulgence with the steak, I would recommend to start with the Celeriac Rémoulade which is widely regarded as a great accompaniment to grills. The unique texture of the celeriac is something that its quite hard to describe but all in all, I like the way it’s done.
From the Desserts section
A guilty pleasure, this. Who would expect a simple black sesame ice cream would taste this good? The Crème brûlée or burnt cream is very well made (again, showed the skills of the chefs here) and very sweet, ideal for those with sweet tooth. The mixture of both warm and cold desserts on the same plate, complete with freshly sliced strawberries easily makes the Earl Grey Crème Brûlée one of the best desserts I have tasted for some time.
The fulfilling, simple and yet oftenly-understated dessert of them all. The waffles served here are quite good but not extraordinary. Maple syrup provided might be insufficient for some but I reckon it shouldn’t be an issue asking for more from the staff. Strawberries are fresh and there’s salted butter cubes for you should you prefer the classic butter taste.
I really enjoyed my time throughout my dining experience at Flutes at the Fort. Diners can choose either outdoors or indoors seatings and although the location might be inconvenient for some, I would say its really worth the effort to take the walk and pop by to try out the food here. There are just so many items on its menu that I reckon it would take a long time to try everything here. Having said that, I’m sure your orders wouldn’t disappoint, in the very least.
